This sauce is
water, tomato, curry leaves, coriander, oil, sugar, tamarind paste, ginger, garlic, chilli, dried coconut, sesame seeds, salt, cumin, kalonji seeds, fenugreek seeds, poppy seeds. No artificial preservatives or colouring.
Sauté approximately 400 g of meat in 120 g of sauce, add a dozen cherry tomatoes (or more if desired) and 60-90 ml water. Cover and simmer until meat is cooked through. Garnish with fresh coriander. For a milder variation, add more meat, tomatoes and water (or coconut milk). Suitable as a marinade for grilling.
Stays fresh in a cool and dark environment for 6 months. If frozen at -18˚C or below, stays fresh for up to 12 months. Once open, use within 1 month and store in fridge.
